Our Noble Chardonnay was picked as the vine leaves were exhibiting their beautiful autumnal yellow, brown and red colours. Hand-picked on the 17th day of May 2016 these sweet, raisined, botrytis laden bunches were whisked back to the winery where they underwent an energetic foot stomp. The following morning the juice was gently extracted using a lengthy 6 hour press cycle to ensure we collected as much sugary flavoursome goodness as possible. The juice was then left to cool at around zero degrees for 10 days to give us lovely bright clean juice for fermentation.
A long and arduous fermentation has given rise to a very tasty sticky indeed. Flavours of orange blossom, ripe pineapple and citrus rind overwhelm the senses. The wine is honeyed and mellifluous across the palate flowing pleasantly to a silky soft finish. Enjoy chilled at the beginning of the evening with some blue cheese or pair with your favourite dessert. If you want to get creative you could even drizzle a little on some vanilla ice cream… Yum!
